Bottling method The primary fermentation process for the Goldrush and Crimson Crisp varieties has been completed. Before bottling, small amount of apple juice was added. The secondary fermentation then took place inside the bottle, resulting in beautiful bubbles.

Short description We started with a thoughtful blend of apples. These were milled and then macerated for 8 hours before we pressed the pomace. The juice underwent spontaneous fermentation in a 750-liter tava amphora.

The primary fermentation process was almost completed using the Goldrush and Crimson Crisp varieties. Before bottling, to increase the fizzyness we added a tiny amount of juice from the Dominic varietiy. This led to a secondary fermentation inside the bottle.
